We’ve recently written about some super healthy desert options so in the interest of balance we thought we’ll give you something… less healthy. These cookies may not be good for your body but boy are they good for your soul. Nothing better than a cup of tea and one of these babies on a rainy November evening. Ladies & gentlemen, I give you our Nutella, Chocolate & Sea Salt Cookies!
The recipe is a pretty standard cookie recipe but something about the Nutella makes the cookies gorgeously gooey in the middle and extremely moreish.
Nutella, Chocolate & Sea Salt Cookies
115g soft unsalted butter
150g packed light brown sugar
100g granulated sugar
1 large egg + 1 egg yolk
1 teaspoon vanilla extract
295g plain flour
1 1/4 teaspoons baking soda
1 teaspoon cornflour
1/2 teaspoon salt
225g chocolate chips, I use dark but use whatever you like
sea salt (optional)
- Pre heat your oven to 180C (160C for a fan oven) and line your cookie sheets with baking parchment.
- In a large bowl using a hand mixer or a standalone mixer with a paddle attachment beat the butter for about a minute until it’s gone smooth & creamy. Add the brown & granulated sugar and continue beating until the mixture turns fluffy and pale in colour. Beat in egg, egg yolk, and vanilla on high speed until combined. Scrape down the sides and bottom of the bowl as needed. Beat in half of the Nutella until combined.
- Whisk the flour, cornflour, baking soda and salt together in a large bowl. On low speed, slowly mix into the wet ingredients until combined. Add the chocolate chips and mix on low for about 5-10 seconds until evenly disbursed. Turn the mixer off and add the remaining Nutella. Beat for 5-10 seconds so the Nutella swirls through the dough and is not fully mixed in.
- Scoop and roll balls of dough (about 1 tablespoon of dough each) into balls. Bake the cookies for 10 minutes, until slightly golden brown around the edges. Cool them for 5 min and then sprinkle each cookie with sea salt. If sweet & salty food is not your thing feel free to skip this step!
